Here's a good one for muffins. It could be adapted to regular bread pretty easily.

Banana Bread


1/2 cup shortening 2 cups flour (plain)
2/3 cups sugar pinch salt
2 eggs 1 tsp. baking soda
3 bananas Mashed

Cream shortening and sugar; add other ingredients. Bake in greased and floured loaf pan 45 minutes at 350 degrees.
