Yes need the warmth to make it work, plus you wouldn't want it to smell. You can do just one week but for more kick the 2nd week really does the trick. My great grand daddys way of wine making

for 1/2 gallon of berries
in a gallon jar crush berries
add 1/2 cup sugar and stir in
place thin cloth over jar and put in cool jar place for a week can stir to make sure sugar is desolved a couple of times
after 1 week strain through a cloth
then add 1/4 cup sugar and put back for another week
then strain and bottle
after bottling keep cool or let pressure off or bottles might explode

I have a few blackberries and would like to make a batch of juice or wine. Is there a simple way to make a small batch? I only have about a 1/2 gallon. I googled how to make wine and it seemed pretty time intensive for such a small amount.
