chocolate truffles----great taste, low in carbs

I have a great recipe for Chocolate Truffles......They taste great and are low in carbs (for diabetics). Only 2.6 grams of carbs per Truffle!!!
Ingredients: 20oz Baking chips, chocolate, semi sweet 2 tbsp Butter, Unsalted, softened 1 cup Whipped cream, heavy
Directions: 1) In large bowl, combined 8 oz chocolate and butter. 2) In small sauce pan, heat whipped cream over low heat, until simmering. 3) Remove cream from heat and spoon 1/2 cup in with chocolate. Gently stir until chocolate begins to melt and mixture becomes smooth. 4) Slowly spoon remaining cream into mixture and stir until ganache is thick and shiny. 5)Spoon ganache into 2" deep baking dish and place in freezer until it is the texture of fudge, about 30mins. 6) Cover a baking pan with wax paper. 7) Remove truffles from freezer. To make truffles form small balls (I always use a spoon to make the balls), place each ball on prepared baking sheet. (Balls do not have to be perfect) 8) When baking sheet is full move to freezer for 15 mins. 9) Remove truffles from freezer roll in hand to make all balls even. Return to freezer. 10) In a heat-safe bowl, put remaining chocolate chips. Set the bowl over simmering water. Heat stiring constantly, until chocolate is melted. 11) Remove from heat stirring frequently until chocolate begins to slightly set at the edges of the bowl. 12) Get truffles from freezer. Dip truffles in chocolate (all sides) Remove from chocolate let extra chocolate drip off. put back on wax paper, cover and put in ref. for 5 min to set. Remove and enjoy!
You can also roll truffles in powered sugar or crushed nuts for added flavor!!! They will keep for 2 weeks in air tight container at room temp or in Ref.
