In my former part of the country, Coffee Jello was a staple at church suppers

2 envelopes of Knox gelatin

3 and 1/2 c very strong brewed hot coffee (I make it almost double strength)

3/4 c sugar

1 tsp vanilla

pinch of salt

Mix until gelatin and sugar are dissolved and put in refrigerator to set. Serve with whipped cream on top. Elegant dessert when set in coffee cups, topped with whipped cream and a dash of ground cinnamon.

Don't let the kids have any or they'll be up all night! But you CAN use de-caf.
