This is the closest I have come to Fine Friends. Use white corn bread. If you want it more like Doc's (Big Bob's) use yellow corn bread. I like Fine Friends better. Serve with an ice cream scooper.
1 cake corn bread
1 can corn drained
1/2 cup finely chopped green pepper
1/2 cup finely chopped celery
1/2 cup finely chopped onion
several pieces cooked bacon crumbled
tomato finely diced
salt and pepper to taste
ranch dressing 1 to 2 cups of home made or small bottle. Mix in until desired consistency.
In large bowl, crumble corn bread, add vegetables, mid in Ranch dressing, using enough to make wet, but still hold together. Mix in bacon and salt and pepper. Refrigerate before serving. Some recipes omit celery. Diced pimento and red pepper can be added if preferred.
