1. gotta have an iron skillet!
2. bacon grease...or oil/shortening if you like...I prefer bacon grease...just for the taste...coat the bottom and sides of skillet and add just a little more to the bottom (tablespoon) or more if you like, depending on size of skillet.
3. start heating it up on the stove on medium high heat and turn your oven to 400 degrees also to preheat
4. sefl rising flour...I prefer White Lily about 2 cups or less for a regular size cake of course that depends on the size of your skillet!
5. 1/3 cup oil or shortening, if you like...it does make a better cake!
6. now for milk or buttermilk...what I do is add the milk starting with about a half cup...if the dough is to stiff add a little at a time (tablespoon) to get the consistancy of thick pancake batter.
7. pour batter into hot skillet...it should sizzle on the bottom and you should be able to see it sizzle all around the sides too....I usually keep mine on top of stove for about 3 minutes...you gotta eyeball it!
8. then put it into preheated oven.
9 let it bake till it rises and the top looks like a golden brown biscuit.
10. remove from oven and flip whole hoecake onto plate then flip it back on another plate so the top is facing up and you can slather butter all over it...

Could someone tell me how to make hoecake bread. I can remember my grandmother making it when I was growing up but I cannot remember how she ddid it. I remember that it was so soft and yummy. Thank you.
