Fail proof egg peeling.
Bring eggs to a boil, turn off heat and let set for 10 min. Then run cold water in the pot, and let set a minute until you can handle them. (during that 10 min, they are cooking, during the cold water wait, the egg is contracting away from the membrane and the shell.)
Break the shell well, by lightly rolling on counter. Pull off one piece of shell, and the rest will just roll right off in your hands.
Never fails, fresh eggs or not.

Sounds as if you've been using fresh eggs. An egg at least 5 days old peels much cleaner and neater, don't ask me why.

Have you ever peeled eggs and they look bad?A friend told me to boil my eggs,let them cool,then at the bottom(pointed end) gently break shell,get small teaspoon and run under shell and it comes off looking so much better.It hasnt failed me yet....My pickled eggs look great....Let me know what you think
